Tasting Note:
Lifted lemon and orange blossom aroma with nougat, almond, tarragon and marjoram. There is a sweet note of candied citrus peel, with hints of salinity and savoury reduction.
The palate is expansive with huge volume. The citrus and fresh herb medley is complemented by hints of almond, cashew and hazelnut with a touch of cinnamon. The finish is super tight and long with fine pithy tannins, salivating threads of acidity and phenomenal length.

Reviews for Tony Bish EGG No. 3 Chardonnay 2024:

The beautifully composed and inviting bouquet presents aromas of golden peach, citrus peel, roasted hazelnut, and a hint of vanilla. This leads to a rich palate that offers intense fruit flavours and stylish complexity. The wine is velvety, with a fine oak infusion and excellent acidity, making it hugely appealing. At its best: now to 2036.

Complex, sophisticated, international and new. Aromas of fresh orchard fruits and spice, an engaging positive reductive quality, citrus peel and crumbled clay stony soils ideas. Dry, taut, textured and complex. Excellent mouthfeel and length, plenty of poise with a saline quality to the acidity, deliciously fresh and lengthy a wine with flavours that mirror the bouquet and mouthfeel that keeps bringing me back to taste again. Very well made with best drinking from 2026 through 2030+.

Pale gold in the glass, with a kiss of smoky minerality leading the perfume. Notes of lemon flesh and rind, peach, pear, cashew, tarragon appear in the bouquet. A mouth-filling palate but with a laser line of direct acidity. There is a line of fine phenolic at the back of the palate – adding personality and complexity. Amazing length to the finish. “Definitely age-worthy” and “Love the energy in the palate” showed how well received this wine was around the table.
Type: White wine
Varietal: Chardonnay
Food pairings: To perfectly highlight this balance of texture, toasted notes, and laser-like freshness, we recommend the following pairings: Pan-seared scallops with brown butter foam & cauliflower purée, roasted corn-fed chicken breast with tarragon cream sauce, pan-fried turbot fillet or cod on lentil risotto, roasted pumpkin or porcini ravioli in sage butter.
Recommended serving temperature: 10-12°C in a Burgundy glass
Vineyard: Single vineyard Chardonnay from the Two Terraces Vineyard in the Mangatahi sub-region of Hawke's Bay.
Vintage notes: The 2024 vintage in Hawke’s Bay marks a triumphant comeback following the severe weather events of the previous year. A warm, dry El Niño summer followed by an ideal autumn provided perfect conditions for optimal grape ripening and flavour development. Cool nights preserved brilliant natural acidity. While yields were small, the harvest delivered fruit of exceptional concentration, peak maturity, and vibrant flavour intensity.
Winemaking: The grapes were whole-bunch pressed. Six concrete egg fermenters were filled with the juice, and from the outset, one vessel shone above the rest with searing intense aromas, harmonic power and laser-like precision: EGG No.3.
