About winemaker Tony Bish
Tony has had a long career in the NZ Wine industry, spanning 40 vintages and counting. He was Senior Winemaker and Founder of Sacred Hill Vineyards Ltd, a highly awarded winery with significant exports. At Sacred Hill, he created one of New Zealand's iconic Chardonnay, the "Rifleman Chardonnay".
Tony Bish Wines was established in 2014, as an independent, high-quality family-owned business. More recently, Tony has been joined by his eldest son Oscar and youngest daughter Genevieve in the business, ensuring that the legacy of Tony Bish Wines remains firmly rooted in family.
Tony Bish Chardonnay: Old vines, serious structure, and innovative winemaking
All Chardonnays produced are sourced from vineyards within the Hawke’s Bay region on the East Coast of the North Island, New Zealand. Tony has specifically selected unique vineyards based on soil type, management excellence, clonal selection and unique climatic aspects particular to each site. Tony is very involved in all aspects of viticulture for each site, working with growers to achieve the best expressions of each site to produce premium Chardonnays with regionality, inherent fruit quality and integrity.
Innovation is at the heart of all Tony does. He has built NZ’s first concrete egg fermenters and produces two wine styles made with this unique methodology. Tony also imported the first French Oak Ovum egg fermenter to the Southern Hemisphere.
Fat & Sassy Chardonnay
Lush and curvy. A bold style matured in a massive 90hl oak cask.
Heartwood ChardonnayThe oak-aged Hawke’s Bay classic. Aged 11 months in new and seasoned French barriques. The 2018 vintage was named one of Robert Parker’s Top 100 Wine Discoveries.
Golden Egg ChardonnayA truly unique wine. Sourced from the same vineyard as Heartwood, but vinified differently. Fermented in golden, egg-shaped concrete tanks, which promote natural circulation and preserve the purity of the fruit. The result: exceptional texture, body, and a subtle mineral finish.
Skeetfield ChardonnayFrom 32-year-old vines—some of the oldest Chardonnay plantings in New Zealand. Old vines mean resilience and depth, producing intensely concentrated wines aged in French oak (60% new).
Zen ChardonnayHand-picked from the Skeetfield vineyard and 100% fermented in an Ovum egg fermenter. The result is a wine of stunning intensity and balance, with subtle citrus notes and remarkable finesse.
Two Terraces ChardonnayA new single-vineyard release. Grown on the cool Mangatahi Terraces, known for their freshness and clarity. The soil—sand, silt, and volcanic ash over deep red-metal gravel—produces an expressive, elegant Chardonnay with real precision.
Crafted in Oak: Taransaud Barrels & Tony Bish Chardonnay
The barrels used to ferment and age the Tony Bish Chardonnay come from Taransaud, a renowned French cooperage with roots dating back to 1672. Like Tony Bish Wines, Taransaud is a family-owned business committed to craftsmanship and tradition. Each barrel is a meticulous creation, made from carefully selected French oak, naturally seasoned, and toasted with precision. Taransaud sources exclusively from certified French forests, ensuring consistency, quality, and full traceability—from forest to finished wine. This dedication to excellence is reflected in every glass of Chardonnay.
